What raccoon values in its raw sweets is keeping heating below 48 degrees Celsius. It applies the raw-food idea of not destroying the enzymes and nutrients of ingredients with heat to making sweets. The tarts and cheesecakes are mainly made of nuts, oil, and fruit, with no cheese, wheat flour, or white sugar. The signature cheesecake actually uses no cheese at all, made only with cashews, coconut, and almonds, a fully plant-based item. Its other face is gluten-free curry. A mild pork curry and a hot veggie curry are each about 950 yen, and combined with the raw sweets, you can complete a health-minded meal and dessert in one shop. It is open five days a week, and takeout only on three weekdays. It is not an easy shop to drop in on, but it keeps its own rhythm in the town of Nishi-Ogikubo.
