Pho Hanoi Yatai 33 Lumine Est Shinjuku is on the 8th floor of Lumine Est Shinjuku. As the name shows, its biggest feature is that 33 kinds of Vietnamese noodle dishes are gathered in one shop. With a street-stall setting where even the furniture is brought from Vietnam, it is like bringing a Vietnamese street-corner stall to the 8th floor in Shinjuku.

Pho starts from a special broth simmered for a long time with chicken bones, pork bones, onion, ginger, and Vietnamese seasonings. The shop's strength is that it offers regional flavors too: Hanoi's standard pho with shabu-shabu beef and green onion, central Hue's bun bo Hue, and southern Ho Chi Minh's bun bo Saigon. Every noodle dish comes as a Vietnamese-style set with fresh spring rolls, fried bread, raw vegetables, coriander, lemon, red chili, and che (a Vietnamese dessert). You tear the fried bread and dip it in the broth, and put the raw vegetables into the noodle broth to soften them slightly; the shop even adds a guide to the local way of eating, showing how thorough its street-stall recreation is. Single dishes such as banh mi and steamed spring rolls, and a vegan deep-fried tofu mazesoba, are also on the menu.
